I attended the 2017 National Restaurant Association Tradeshow in Chicago at McCormick Place this past week looking for the latest and greatest in Italian foods and trends. I asked over 30 Italian food chefs / producers / manufacturer / distributors / importers the same question: “What are the new trends in Italian Food”. The answer was unanimous – Italian food is not about trends. It is about simple, high-quality ingredients artistically prepared. Well OK, I completely agree with that.
